Ingredients

  • 12 oz spaghetti
  • 2 chicken breasts, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 small onion, chopped
  • 1 cup bell peppers, sliced
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add sliced chicken, Cajun seasoning, paprika, salt, and black pepper. Cook until golden and fully cooked, then remove and set aside.
  3. In the same pan, melt butter and sauté garlic, onion, and bell peppers until soft and fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add cream cheese and stir until fully melted and the sauce is smooth.
  6. Mix in grated Parmesan cheese and cook until the sauce thickens slightly.
  7. Return the cooked chicken to the pan and stir to combine.
  8. Add the cooked spaghetti and toss until evenly coated with the sauce.
  9. Taste and adjust seasoning if needed, then garnish with fresh parsley before serving.
