A fresh and vibrant summer salad combining juicy peaches, sweet blueberries, creamy feta, and crisp greens, all tossed in a light and tangy vinaigrette.

Ingredients

  • 5 cups mixed greens (spinach, arugula, or spring mix)
  • 1 cup fresh blueberries
  • 2 ripe peaches, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 small red onion, thinly sliced
  • 1/3 cup toasted nuts (almonds, pecans, or walnuts)
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice or balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and thoroughly dry the mixed greens, blueberries, and peaches.
  2. Place the greens in a large serving bowl.
  3. Layer the blueberries and sliced peaches over the greens.
  4. Add the thinly sliced red onion and sprinkle crumbled feta cheese on top.
  5. Sprinkle toasted nuts over the salad for added crunch.
  6. In a small bowl, whisk together olive oil, lemon juice or balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
  7. Drizzle the dressing over the salad just before serving.
  8. Gently toss until all ingredients are evenly coated.
