Blueberry Lemon Overnight Oats are a refreshing, no-cook breakfast featuring creamy oats, juicy blueberries, and bright lemon flavor—perfect for busy mornings and meal prep.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk of choice (dairy or plant-based)
  • 1/4 cup Greek yogurt or yogurt of choice
  • 1/3 cup fresh or frozen blueberries
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 12 tsp honey or maple syrup (optional)
  • 1 tsp chia seeds (optional)
  • 1/4 tsp vanilla extract (optional)

Instructions

  1. In a jar or container, combine oats, milk, yogurt, lemon zest, lemon juice, and sweetener (if using).
  2. Stir in chia seeds and vanilla extract if desired.
  3. Gently fold in the blueberries.
  4. Cover and refrigerate overnight or for at least 4–6 hours.
  5. In the morning, stir well and top with extra blueberries, lemon zest, or a drizzle of honey before serving.
