Blue Truffles are elegant, creamy bite-sized treats coated in a vibrant blue chocolate shell. Perfect for celebrations, they combine a rich white chocolate ganache center with a stunning, customizable outer layer for a magical dessert experience.

Ingredients

  • 12 oz white chocolate or white chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract (or almond/coconut extract)
  • 10 oz blue candy melts or white chocolate + blue gel food coloring
  • Sprinkles, edible glitter, or crushed candies (optional for decorating)

Instructions

  1. Heat heavy cream and butter in a saucepan until it begins to simmer.
  2. Pour the hot mixture over the chopped white chocolate in a bowl. Let sit for 1–2 minutes, then stir until smooth.
  3. Mix in the vanilla extract. Let the mixture cool slightly, then refrigerate for at least 2 hours until firm.
  4. Scoop out small portions and roll into balls. Freeze for 20 minutes.
  5. Melt the blue candy melts or white chocolate with blue gel food coloring until smooth.
  6. Dip each truffle in the coating and place on parchment paper.
  7. Decorate immediately with sprinkles or shimmer, if desired.
  8. Let the coating set at room temperature or chill briefly to harden.

Notes

  • Use almond or coconut extract for a flavor twist.
  • Mix in freeze-dried fruit powder for a fruity ganache.
  • Roll in sugar crystals instead of dipping for a quick finish.
  • Freeze undipped truffles for up to 1 month.
