Creamy, no-bake truffles made with Biscoff cookie butter, crushed cookies, and a rich chocolate coating. These Biscoff Cookie Butter Truffles are easy to make and perfect for parties, gifts, or sweet cravings.

Ingredients

  • 1/2 cup Biscoff cookie butter
  • 8 Biscoff cookies, crushed (about 1/2 cup)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup white or milk chocolate chips (or candy melts)
  • Additional crushed Biscoff cookies for garnish (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese and Biscoff cookie butter until smooth.
  2. Add powdered sugar, vanilla extract, and crushed Biscoff cookies. Mix until a thick dough forms.
  3. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
  4. Chill in the fridge or freezer for at least 30 minutes until firm.
  5. Melt chocolate chips in the microwave or double boiler, stirring until smooth.
  6. Dip each chilled truffle into the melted chocolate, letting excess drip off, and place back on the tray.
  7. Optional: Sprinkle crushed Biscoff cookies on top while chocolate is still wet.
  8. Let chocolate set completely before serving or storing.

Notes

  • Use dark chocolate or white chocolate for different flavor profiles.
  • Add a pinch of cinnamon or sea salt for a twist.
  • Drizzle with colored candy melts or sprinkles for holidays or events.
  • Substitute cream cheese with more cookie butter and a bit of heavy cream for a cream cheese-free version.
  • Store in the fridge or freeze for longer storage.
