Bierocks are soft, golden baked rolls stuffed with savory ground beef, cabbage, and onions—perfect for a comforting dinner, portable lunch, or make-ahead freezer meal. This easy bierocks recipe uses homemade or store-bought dough and comes together in under an hour. A beloved Midwestern favorite you’ll crave again and again!

Ingredients

  • Bread dough (homemade or store-bought rolls)
  • Ground beef
  • Onion, chopped
  • Cabbage, shredded
  • Salt and pepper, to taste
  • Garlic powder
  • Egg wash (1 egg + 1 tbsp water)

Instructions

  1. In a skillet over medium heat, brown ground beef and onions until the beef is fully cooked and onions are soft.
  2. Add shredded cabbage to the skillet and cook until wilted and tender, about 5–7 minutes.
  3. Season the filling with salt, pepper, and garlic powder. Let cool slightly.
  4. Divide dough into 8–10 portions and roll each into a circle.
  5. Spoon filling into the center of each dough circle. Fold and pinch the edges to seal.
  6. Place bierocks seam-side down on a parchment-lined baking sheet.
  7. Brush tops with egg wash.
  8. Bake at 375°F (190°C) for 20–25 minutes, until golden brown.
  9. Serve warm.
