BEST EVER One-Pot Lasagna Soup is everything you love about traditional lasagna—savory meat sauce, melty cheese, and tender noodles—transformed into a hearty, cozy soup. It’s quick, comforting, and made entirely in one pot, perfect for easy weeknight dinners.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes or tomato sauce
  • 2 tbsp tomato paste
  • 4 cups beef or chicken broth
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • Salt and pepper to taste
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. In a large pot over medium heat, cook the ground beef or sausage until browned. Drain any excess grease.
  2. Add chopped onion and garlic. Sauté until soft and fragrant, about 3–4 minutes.
  3. Stir in tomato paste, crushed tomatoes, Italian seasoning, salt, and pepper. Pour in the broth and bring to a simmer.
  4. Add broken lasagna noodles and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is tender.
  5. Just before serving, stir in ricotta cheese or dollop on top of each bowl.
  6. Top with mozzarella and Parmesan cheese. Garnish with fresh basil or parsley if desired.
