This creamy and crunchy chicken salad combines tender cooked chicken with fresh vegetables and a tangy, seasoned dressing. It’s quick to prepare, perfect for meal prep, and delicious in sandwiches, wraps, or on its own.

Ingredients

  • 2 cups cooked chicken breast, chopped or shredded
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 cup halved grapes or chopped apples
  • Optional: 1/4 cup chopped walnuts or sliced almonds

Instructions

  1. In a large bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth.
  2. Add chopped chicken, celery, red onion, and parsley to the bowl.
  3. Stir until the chicken is well coated in the dressing.
  4. If using grapes, apples, or nuts, gently fold them in.
  5. Chill the salad for at least 30 minutes before serving to enhance flavor.

Notes

  • Use Greek yogurt instead of mayo for a lighter version.
  • Add dill or chives for extra herby flavor.
  • Great for sandwiches, wraps, or served on lettuce.
  • Store in fridge for up to 3–4 days.
  • Not recommended for freezing due to texture change.
