A creamy, crunchy broccoli pasta salad made with tender pasta, blanched broccoli, cheddar cheese, and a tangy dressing. Perfect for potlucks, BBQs, or a satisfying make-ahead meal.

Ingredients

  • 8 oz pasta (rotini, penne, or bowties)
  • 4 cups broccoli florets, chopped into bite-sized pieces
  • 1/2 red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds or chopped nuts (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons apple cider vinegar or white vinegar
  • 1 tablespoon honey or sugar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Blanch the broccoli by boiling for 1 minute, then transferring to an ice bath. Drain well.
  3. In a large bowl, combine the pasta, broccoli, red onion, cheddar cheese
  4. In a separate bowl, whisk together mayonnaise, Greek yogurt or sour cream, vinegar, honey, salt, and pepper to create the dressing.
  5. Pour the dressing over the pasta and vegetable mixture. Toss to coat evenly.
  6. Cover and chill for at least 30 minutes before serving to allow flavors to meld.

Notes

  • Use all Greek yogurt for a lighter dressing.
  • Substitute cheddar with feta for a tangy twist.
  • Add grilled chicken or chickpeas for extra protein.
  • Mix in dried cranberries or raisins for sweetness.
  • Store in the fridge up to 3 days and stir before serving.
