A creamy, tangy baked feta orzo dish made with roasted cherry tomatoes, garlic, and herbs, creating a rich Mediterranean-style meal with minimal effort.

Ingredients

  • 1 1/2 cups orzo pasta
  • 1 block (7–8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh basil or parsley (for garnish)
  • 1/4 teaspoon red pepper flakes or 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the block of feta in the center of a baking dish and surround it with cherry tomatoes.
  3. Drizzle olive oil over everything, then add minced garlic, oregano, salt, and black pepper.
  4. Bake uncovered for 30–35 minutes, until tomatoes are blistered and feta is lightly golden.
  5. Meanwhile, cook the orzo in salted boiling water according to package instructions. Drain well.
  6. Remove the baking dish from the oven and mash the feta and tomatoes together to form a creamy sauce.
  7. Stir the cooked orzo into the sauce until evenly coated.
  8. Finish with fresh herbs and optional red pepper flakes or lemon zest before serving.

Notes

  • Block feta melts creamier than crumbled feta.
  • Add a splash of pasta water if the mixture feels too thick.
  • Great served warm or chilled as a pasta salad.
