A warm and comforting baked oatmeal filled with sweet berries and lightly spiced oats, creating a soft, cake-like breakfast that is wholesome and easy to prepare.

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups mixed berries (fresh or frozen)
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter or coconut oil, melted

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the eggs, milk, maple syrup or honey, vanilla extract, and melted butter or coconut oil.
  4. Pour the wet ingredients into the oat mixture and stir until well combined.
  5. Gently fold in most of the berries, reserving a small portion for the top.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Sprinkle the remaining berries on top.
  8. Bake for 35–40 minutes until the center is set and the top is lightly golden.
  9. Allow the oatmeal to cool slightly before slicing and serving.

Notes

  • Frozen berries can be used without thawing.
  • Rolled oats provide the best texture, while quick oats will create a softer result.
  • Chopped nuts such as almonds or walnuts add extra crunch.
  • Mashed banana or grated apple can add natural sweetness and moisture.
  • Leftovers can be stored in the refrigerator for up to 4 days.
  • Add a splash of milk when reheating to keep the oatmeal moist.
