This beef, onion, and mushroom stir-fry over rice is a quick and hearty dish featuring tender slices of beef, caramelized onions, and earthy mushrooms in a savory, glossy sauce. It’s simple, satisfying, and perfect for busy weeknights.

Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 large yellow or white onion, sliced
  • 8 oz mushrooms (cremini, button, or shiitake), sliced
  • 3 cups cooked white or brown rice
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce (for marinade)
  • 1 tsp sesame oil (for marinade)
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce (for sauce)
  • 1 tbsp oyster sauce
  • 1 tsp brown sugar
  • 1/4 cup water or beef broth
  • 2 tbsp neutral oil (vegetable or canola), divided
  • Salt and black pepper, to taste
  • Optional: sliced green onions or sesame seeds for garnish

Instructions

  1. In a bowl, toss sliced beef with 2 tbsp soy sauce, 1 tsp sesame oil, and cornstarch. Let marinate while prepping other ingredients.
  2. In a separate bowl, whisk together 2 tbsp soy sauce, oyster sauce, brown sugar, and water or broth to make the stir-fry sauce.
  3. Heat 1 tbsp oil in a large pan or wok over medium-high heat. Sear the beef until browned, then remove and set aside.
  4. Add remaining oil to the pan. Sauté the onions and mushrooms until softened and lightly caramelized, about 5–6 minutes.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Return beef to the pan. Pour in the stir-fry sauce and stir everything together.
  7. Let simmer for 2–3 minutes until the sauce thickens and coats the beef and vegetables.
  8. Serve hot over cooked rice. Garnish with green onions or sesame seeds if desired.

Notes

  • Add bell peppers or snow peas for extra crunch and color.
  • Hoisin sauce or extra soy sauce with a splash of rice vinegar can replace oyster sauce.
  • For spice, add chili flakes or a drizzle of chili oil.
  • Swap beef with chicken or tofu for variety.
  • Use pre-cooked or leftover rice for convenience.
