Beef Goulash {Slow Cooker or Oven Recipe}

This Beef Goulash is a hearty and flavorful dish made with tender chunks of beef simmered in a smoky, paprika-rich tomato sauce. Whether slow-cooked or baked in the oven, this easy one-pot recipe is comfort food at its finest — perfect for cozy nights and make-ahead dinners.

Ingredients

  • 700g (1.5 lb) diced beef
  • 1 onion, peeled and chopped
  • 4 cloves garlic, peeled and crushed
  • 1 can (400g / 14.5 oz) tinned tomatoes
  • 2 tbsp tomato puree
  • 2 beef stock cubes (undiluted)
  • 1 tsp paprika
  • 2 tsp sweet smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 red bell peppers, deseeded and thinly sliced (added later)

Instructions

  1. Slow Cooker Method:
    1. Add all “To Slow Cook” ingredients into the slow cooker.
    2. Cook on HIGH for 4–5 hours or LOW for 6–8 hours.
    3. About 45–60 minutes before serving, stir in sliced red peppers. Continue cooking on HIGH until tender but not mushy.
  2. Oven Method:
    1. Place all ingredients (including red peppers) into a large, lidded ovenproof pan.
    2. Bake at 160°C fan / 180°C / Gas Mark 4 / 320°F for 1.5 to 2.5 hours, depending on the size of the beef cubes.
    3. After one hour, stir and check the sauce level. Add a splash of water if it’s drying out.

Notes

  • Caraway Seeds: Add 1 tsp for a traditional Hungarian twist.
  • Spicy Version: Add chili flakes or hot paprika for extra heat.
  • More Veggies: Add mushrooms or carrots for a heartier dish.
  • Sour Cream Swirl: Stir in a spoonful of sour cream before serving for creaminess.
  • Serving Suggestions: Serve over mashed potatoes, rice, or buttered noodles.
