A smooth and creamy homemade mayonnaise made from egg yolk, mustard, lemon juice, and oil, creating a rich condiment perfect for sandwiches, sauces, and dressings.

Ingredients

  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice or white vinegar
  • 3/4 cup neutral oil (sunflower or vegetable oil)
  • 1/4 teaspoon salt
  • Pinch of white pepper (optional)

Instructions

  1. Place the egg yolk, Dijon mustard, and lemon juice or vinegar in a bowl.
  2. Whisk the ingredients together until well combined.
  3. Begin adding the oil very slowly in a thin stream while whisking continuously.
  4. Continue whisking steadily as the mixture starts to thicken and emulsify.
  5. Gradually add the remaining oil while whisking until the mayonnaise becomes thick, smooth, and creamy.
  6. Season with salt and white pepper if desired.
  7. If the mayonnaise becomes too thick, whisk in a teaspoon of warm water to loosen the texture.
