Barbecue beef ribs are smoky, tender, and packed with bold flavor from a spice rub and caramelized barbecue sauce glaze. Slow-cooked in the oven and finished on the grill, they’re a perfect centerpiece for cookouts or comforting dinners.

Ingredients

  • 34 pounds beef ribs (short ribs or back ribs)
  • 2 tbsp brown sugar
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup barbecue sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Remove silver skin or membrane from the back of the ribs for better tenderness.
  3. In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, chili powder, salt, and pepper.
  4. Rub the ribs with olive oil, then coat thoroughly with the spice mix.
  5. Place the ribs on a foil-lined baking sheet, cover tightly with another sheet of foil, and bake for 3–3.5 hours until tender.
  6. Preheat the grill (or broiler) to medium-high heat.
  7. Brush the ribs with barbecue sauce and grill for 8–10 minutes, turning once and basting again, until the sauce caramelizes.
  8. Remove from grill and let rest for 10 minutes before slicing and serving.

Notes

  • For deeper flavor, refrigerate the rubbed ribs overnight before cooking.
  • Use a smoker instead of an oven for a more intense smoky taste.
  • Add cayenne or chipotle for extra heat.
  • Brush with Korean-style barbecue sauce for an international twist.
