Ingredients

  • 1 cup mashed banana (very ripe)
  • 4 cups all-purpose flour
  • 1/2 cup melted unsalted butter
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk
  • Softened butter (for filling)
  • Sugar (for filling)
  • Extra cinnamon (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix mashed banana, melted butter, and sugar until smooth.
  3. Beat in eggs until creamy.
  4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and vanilla.
  5. Gradually add dry ingredients to banana mixture, alternating with milk, mixing until soft dough forms.
  6. Roll dough on a floured surface into a large rectangle.
  7. Spread with softened butter, sprinkle with sugar and cinnamon.
  8. Roll up lengthwise and slice into 1-inch rolls.
  9. Arrange rolls in baking dish, leaving space between them. Cover and let rise for 30 minutes.
  10. Bake 25–30 minutes, until golden brown.
  11. Cool slightly before serving warm.
