Balsamic chicken breast with spinach and tomatoes is a quick and healthy one-skillet meal featuring juicy seared chicken, a tangy balsamic glaze, and fresh veggies. It’s flavorful, nutrient-rich, and ready in just 30 minutes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil, divided
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • 2 cups cherry or grape tomatoes, halved
  • 4 cups fresh spinach
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp Italian seasoning or dried basil
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Add remaining olive oil to the skillet if needed. Sauté garlic for 30 seconds until fragrant.
  4. Add cherry tomatoes and cook for 3–4 minutes until they begin to soften and burst.
  5. Stir in balsamic vinegar and honey. Simmer for 1–2 minutes to slightly reduce.
  6. Add spinach and cook until wilted, about 1–2 minutes.
  7. Return chicken to the skillet and spoon sauce over top. Cook for 1–2 more minutes to warm through.
  8. Garnish with fresh herbs and serve hot.
