This baked zaatar yogurt chicken is juicy, tender, and infused with bold Middle Eastern flavors. Marinated in a tangy yogurt and zaatar spice mix, then oven-baked to perfection, it’s a healthy and flavorful dish that’s easy to prepare.

Ingredients

  • 4 chicken thighs or breasts (bone-in or boneless)
  • 1 cup plain yogurt (Greek or regular)
  • 2 tbsp zaatar spice blend
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: chopped fresh parsley or mint for garnish

Instructions

  1. In a large bowl, whisk together yogurt, zaatar, garlic, lemon juice, olive oil, salt, and pepper.
  2. Add the chicken and coat thoroughly in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 400°F (200°C).
  4. Place marinated chicken in a baking dish or on a lined baking sheet.
  5. Bake for 25–35 minutes, depending on the thickness, until fully cooked and golden brown.
  6. Let the chicken rest for a few minutes before serving. Garnish with fresh herbs if desired.

Notes

  • For a spicier version, add a pinch of chili flakes to the marinade.
  • Try this recipe with drumsticks or wings for a fun twist.
  • If you don’t have zaatar, make a quick blend with thyme, sesame seeds, sumac, and oregano.
