A flavorful Mediterranean-style baked chicken dish marinated in a bright souvlaki-inspired mixture of lemon, garlic, olive oil, and herbs. The chicken turns tender, juicy, and aromatic, making it a perfect healthy main course.

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • Lemon slices for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper to make the marinade.
  3. Place the chicken breasts in a bowl or shallow dish and pour the marinade over them, ensuring each piece is evenly coated.
  4. Marinate the chicken for at least 30 minutes, or refrigerate for up to 2–4 hours for deeper flavor.
  5. Transfer the chicken to the prepared baking dish and pour any remaining marinade over the top.
  6. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and sprinkle with fresh parsley.
  8. Serve warm with optional lemon slices and an extra squeeze of lemon juice if desired.
