Crispy on the outside and soft on the inside, these baked cheesy mashed potato bites are a fun and comforting snack made from creamy potatoes, cheese, and simple seasonings—perfect for sharing or using leftovers.

Ingredients

  • 3 cups (600 g) mashed potatoes
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (50 g) grated parmesan cheese
  • 2 large eggs
  • 1/2 cup (50 g) breadcrumbs
  • 1/4 cup (30 g) chopped green onions
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter or cooking spray

Instructions

  1. Preheat the oven to 200°C (400°F) and lightly grease a mini muffin tin or baking sheet.
  2. In a large bowl, combine mashed potatoes, cheddar cheese, parmesan cheese, eggs, breadcrumbs, green onions, garlic powder, salt, and black pepper.
  3. Mix everything thoroughly until well combined.
  4. Scoop the mixture into small portions and shape into bite-sized balls or press into the muffin tin.
  5. Lightly brush or spray the tops with butter or cooking spray.
  6. Bake for 20–25 minutes, or until golden brown and crispy on the outside.
  7. Remove from the oven and allow to cool slightly before serving.
