Ingredients

  • 4 plums, cut into wedges
  • 2 tablespoons salted butter
  • 3 tablespoons real maple syrup
  • 2 sprigs fresh thyme, plus extra for garnish
  • 1 sheet frozen puff pastry, thawed
  • 1 wheel brie cheese (8 oz)
  • 1 rounded tablespoon fig jam or preserves
  • 1 egg, beaten
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss plums with butter, maple syrup, and thyme in a baking dish. Roast for 20–25 minutes, stirring halfway, until tender and caramelized.
  3. Place puff pastry on a parchment-lined baking sheet. Set brie in the center and trim a little rind from the top. Spread fig jam over cheese.
  4. Fold pastry over brie, sealing completely. Brush with beaten egg and sprinkle with coarse sugar.
  5. Bake for 20–25 minutes until golden and puffed.
  6. Spoon roasted plums and syrup over baked brie, garnish with thyme, and serve warm with crackers, bread, or veggies.
