Baked Apple Cider French Toast is a cozy, make-ahead breakfast casserole that combines the warm flavors of apple cider, tender baked apples, and a buttery brown sugar topping—perfect for fall mornings or holiday brunch.

Ingredients

  • 1 loaf day-old French bread or brioche, cubed (about 8 cups)
  • 6 large eggs
  • 1 1/2 cups apple cider
  • 1 cup whole milk or half-and-half
  • 1/4 cup brown sugar (for custard)
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 apples, peeled and diced
  • 2 tbsp brown sugar (for topping)
  • 2 tbsp butter, melted (for topping)
  • Optional: powdered sugar or maple syrup for serving

Instructions

  1. Grease a 9×13-inch baking dish and spread cubed bread evenly inside.
  2. In a large bowl, whisk together eggs, apple cider, milk, brown sugar, granulated sugar, vanilla, cinnamon, and nutmeg.
  3. Fold in the diced apples and pour the mixture evenly over the bread. Press down gently to ensure it soaks in.
  4. Cover the dish and refrigerate overnight or let sit for at least 30 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Combine brown sugar and melted butter for the topping and drizzle over the casserole.
  7. Bake uncovered for 45–50 minutes, until the top is golden and the custard is set.
  8. Let cool slightly before dusting with powdered sugar or drizzling with maple syrup.
