Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 can (15 oz) pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan generously.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet mixture, stirring just until combined.
  5. Fold in the chopped apples.
  6. Pour the batter into the prepared bundt pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
