These Apple Fritter Bites are crispy on the outside, fluffy on the inside, and bursting with warm apple and cinnamon flavor. Coated in a sweet vanilla glaze, these bite-sized fritters are the perfect fall treat for breakfast, dessert, or snacking. Quick to make, easy to fry, and always a crowd-pleaser — just like classic apple fritters, but mini!

Ingredients

  • For the Fritter Batter:
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup milk (or buttermilk)
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted
  • 1½ cups chopped apples (Granny Smith or Honeycrisp)
  • Oil for frying (vegetable or canola)
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Heat 2 inches of oil in a heavy pan or Dutch oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and sugar.
  3. In a separate bowl, whisk eggs, milk, vanilla, and melted butter until smooth.
  4. Pour wet mixture into dry ingredients and stir until just combined. Fold in chopped apples.
  5. Using a spoon or small cookie scoop, drop batter into hot oil in batches. Fry for 2–3 minutes per side until golden brown and cooked through.
  6. Transfer to a paper towel-lined plate to drain.
  7. For the glaze: whisk powdered sugar, milk, and vanilla until smooth.
  8. Dip each fritter into the glaze or drizzle it on top. Let set before serving.

  • Use tart apples like Granny Smith for a balanced flavor.
  • Add chopped pecans or walnuts for extra crunch.
  • For a baked version, spoon batter into mini muffin tins and bake at 350°F for ~15 minutes.
