Ingredients

  • For the cake:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 1/2 cups chopped apples (peeled and cored, such as Granny Smith or Honeycrisp)
  • For the crumb topping:
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch or 9×9-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla and sour cream.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped apples.
  7. Pour the batter into the prepared pan and smooth the top.
  8. In a separate bowl, mix the crumb topping ingredients: flour, brown sugar, granulated sugar, and cinnamon. Stir in melted butter until crumbly.
  9. Sprinkle the crumb topping evenly over the cake batter.
  10. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool slightly, then dust with powdered sugar if desired.
