A rustic yet elegant apple brie phyllo galette featuring crisp, flaky pastry wrapped around tender apples and creamy melted brie. This sweet and savory dish is simple to assemble but impressive enough for holidays or special gatherings.

Ingredients

  • 6 sheets phyllo dough, thawed
  • 3 tablespoons melted butter or olive oil
  • 2 medium apples, thinly sliced
  • 6 ounces brie cheese, sliced
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 tablespoon brown sugar
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place one sheet of phyllo on the baking sheet and brush lightly with melted butter or olive oil. Repeat with remaining sheets, layering and brushing each one.
  3. In a bowl, toss sliced apples with lemon juice, brown sugar, and a pinch of salt.
  4. Arrange the apple slices in the center of the layered phyllo, leaving a border around the edges.
  5. Top with slices of brie and drizzle honey over the filling. Sprinkle fresh thyme if using.
  6. Gently fold the edges of the phyllo over the filling to create a rustic crust.
  7. Brush the folded edges lightly with additional butter or oil.
  8. Bake for 25–30 minutes, until the phyllo is golden and crisp and the apples are tender.
  9. Cool slightly before slicing and serving.

  • Use firm apples like Honeycrisp or Granny Smith for best texture.
  • Add chopped walnuts or pecans for extra crunch.
  • Drizzle additional honey after baking for more sweetness.
