Tender baked chicken breasts stuffed with sweet apple slices and creamy melted brie, creating a comforting and elegant dish with balanced savory and sweet flavors.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 apple, thinly sliced
  • 4 oz brie cheese, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh rosemary or parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut a pocket into each chicken breast by slicing horizontally through the thickest part without cutting all the way through.
  3. Season the chicken inside and out with salt, black pepper, garlic powder, and dried thyme.
  4. Stuff each chicken breast with slices of apple and pieces of brie cheese.
  5. Secure the opening with toothpicks if necessary to keep the filling inside.
  6. Place the stuffed chicken breasts in the prepared baking dish.
  7. Drizzle olive oil over the chicken.
  8. Bake for 25 to 30 minutes or until the chicken is fully cooked and the cheese is melted.
  9. Remove toothpicks before serving.
  10. Garnish with chopped rosemary or parsley if desired.

Notes

  • Firm apples such as Honeycrisp, Fuji, or Gala work best.
  • Fresh spinach can be added to the filling for extra flavor and color.
  • Caramelized onions pair well with the apples and brie.
  • Seasoned breadcrumbs sprinkled on top create a light crispy crust.
  • Secure the chicken with toothpicks to prevent filling from leaking out.
