Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil or butter
  • 8 oz fresh mushrooms, sliced

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • For the honey mustard sauce:
    • 1/4 cup Dijon mustard
    • 2 tbsp honey
    • 2 tbsp mayonnaise
    • 1 tsp lemon juice (optional)

Instructions

  1. Preheat oven to 375°F (190°C) if finishing in the oven.
  2. Season chicken with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a skillet over medium heat. Sear chicken on both sides until golden, then finish cooking in the oven until fully cooked (about 20–25 minutes total).
  4. Sauté mushrooms in butter or oil until browned and tender.
  5. In a small bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice to make the honey mustard sauce.
  6. Spread sauce over cooked chicken, top with sautéed mushrooms, and sprinkle with shredded cheese.
  7. Return chicken to oven or broil for a few minutes until cheese is melted and bubbly.
  8. Serve hot, with extra honey mustard sauce on the side if desired.
