This 3-Ingredient Flourless Chocolate Cake is a rich, dense, and velvety dessert made with just chocolate, eggs, and butter. It’s naturally gluten-free and incredibly simple to make—perfect for when you want an elegant chocolate treat with minimal effort.

Ingredients

  • 8 oz semi-sweet or dark chocolate (chopped or chips)
  • 1/2 cup (1 stick) unsalted butter
  • 4 large eggs, room temperature

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper and lightly grease it.
  2. Melt chocolate and butter together in a heatproof bowl over simmering water (or microwave in 20-second bursts), stirring until smooth.
  3. In a large bowl, beat eggs on high speed with a hand or stand mixer for 6–8 minutes until tripled in volume, pale, and fluffy.
  4. Gently fold the chocolate mixture into the whipped eggs in batches, keeping the mixture light and airy.
  5. Pour the batter into the prepared pan and bake for 25–30 minutes, until the top is set and the center is slightly jiggly.
  6. Cool the cake completely in the pan, then refrigerate for a few hours for best texture before serving.

Notes

  • Use high-quality chocolate for best flavor and texture.
  • Sprinkle sea salt on top before baking for a sweet-salty finish.
  • Add vanilla, espresso, or orange zest for flavor variations.
  • Top with whipped cream, berries, or ganache for extra indulgence.
  • Best served chilled or at room temperature—no reheating needed.
